a chart for you!!
ground meat (or "meat") + aromatics + sauce + vegetable = WHAT'S FOR DINNER
On Tuesday I shared a recipe for broccoli + pork with soy + hot honey. It’s so simple and very, very good.
I have been thinking about the method of that recipe and how effective it is for producing a great meal very quickly.
So today I thought I’d break it down for you and give you a bunch of variations on the theme…so…drum roll, please!…I’ve got a chart for you!
It’s been a while since I shared a chart with you! To make any of the dishes I outlined in the chart above, just follow this technique:
Put a little oil in a large nonstick wok or skillet (or cast iron) / for a pound of meat, about 2 tablespoons is good
Add the ground meat (or veg. alternative) and whatever aromatics you’re using to season it with…plus a good pinch of salt! / for a pound of meat, you want about 1/2 cup of sliced onion (or scallion or whatever is on the list or on your counter) and/or ~4 minced garlic cloves
Cook until it’s nicely browned!
Then add the sauce stuff!! / for a pound of meat, you want anywhere between 2 tablespoons and 1/4 cup of sauce — I like mixtures of things like I described in the chart
Cook for a minute or two just to get everything all glazed and great
Then add a splash of water (about 2 - 4 tablespoons) to create some steam, stir in about a pound of whatever vegetable(s) I suggest (or that you’d like to use), cover and cook until the vegetable is cooked to your liking — it’s good to uncover and stir once a minute or so
That’s it! Serve with rice, noodles, baked potatoes, garlic bread, warm pita bread…whatever carby thing your heart desires!
This is all very flexible and easygoing. Don’t stress! It’s just dinner!

The dish - fast ragu
Ground Meat - italian sausage or other sausage of your choice
Aromatics - onion, garlic, italian seaoning (or other depending on your sausage)
Sauce - can of diced tomatoes, splash of red wine
Veg - carrots, spinach, bell pepper (time to clean out the fridge!)
Simmer a bit to let the tomatoes break down while you cook your carby thing.
