In case people want ideas where you can’t taste the zucchini, which tbh is me sometimes:

Recipe is based on one in Martha’s Baking Book for cranberry-zucchini bread. I add the chocolate chips and bake as muffins. 😋

What do I do with all this… Swiss chard?!! All the recipes I’m finding are more “winter” recipes… soups, stews, etc. How might I use chard in summer recipes??

i love this! i’m excited to try the smashed zucchini!

we eat smoothies for breakfast quite a bit and something we do is cut zucchini is cut them into rounds, steam them, freeze them, and pop them in the smoothies for a good deal of fiber. the texture is great, too!

I love zucchini, it reminds me of summer. My mom sautéed thin slices in olive oil and then added in eggs for a scramble when I was young, sort of a fast version of a frittata. I still make it when zucchini season rolls around ❤️

Thank you for the reminder about your spring meatballs! Going to use two of my current zucchinis for it. Can't wait!

We also love the Smitten Kitchen sauteed zucchini with almonds. It takes less than 10 min (I use a spiralizer instead of cutting the zucchini) and for something so simple, it's surprisingly special!

Thank you for the great ideas! I subscribe to a CSA that supports refugee farmers. They usually include things I haven't heard of. This week's surprise items were gypsy peppers and shiso. They give us so many fresh herbs, so far I've received sage and oregano. Thanks for inspiring me!
