Thank you so much for this letter, as well as your books. You make my life is easier and give me lots of ideas. I gave Simply Julia to a few friends who love it as much as I do. Today's letter was a great addition.

I couldn't love this more! I really needed some of those reminders. More and more I find myself cooking intuitively/without recipes and gravitating toward simple meals, and this was just the inspiration I needed. Speaking of which, I made your ground beef tacos last night (from the "Seven Things to Do With Ground Meat" page of Small Victories) with sour cream, pickled jalapeños, and avocado and my girlfriend and I both loved them!

Oh, and my go-to easy meal is scrambled egg tacos with sour cream, avocado, and Cholula!

All of your recipes and meal ideas are always winners! The ideas you shared here are awesome & so helpful.

One of my favorite adaptations of one of your Simply Julia recipes is to double the Tamale Pie by adding ground turkey to the bean and corn filling. I divide the filling mixture into 2 ovenproof/freezer-proof baking dishes, top with the cornmeal topping and par-bake one, fully bake the other. The par-baked dish goes in the freezer, the other gets eaten for dinner + lunch leftovers. Lots of meals with less effort!!!

If I’m not using one of your foolproof recipes, I often sauté onions, garlic, diced carrots and mix into leftover cooked grains or beans, then add some steamed hearty greens. Maybe a fried egg on top. Lots of hot sauce. Always delicious and never the same meal twice!
