I think I have made indecision grilled chicken more than literally any other recipe. Okay, maybe it rivals blender muffins! It hits every note - easy, delicious and I love that it's adaptable to whatever bunches of herbs I might have in my crisper. And the true mark of a great recipe - it's great for a Tuesday night and it's great for guests, I always get compliments when I make it for others!
I'm with you! Mowing the lawn, shoveling snow off the sidewalk, even vacuuming or ironing - there is something about the repetitive back and forth nature of the labor and the ability to see progress as you go, and when the job is done, it is DONE!!! (at this point you have to trick your brain into forgetting that grass grows, snow falls and dogs shed....)
I will be making several of your recipes for the holiday weekend! ...and her is one from my daughter that she improvised - chicken thighs skin side down (well seasoned of course) into stove top cast iron cook on low/medium temp - yep no oil - let the fat from the chicken render and become the flavor....until chicken skin is brown (10-15 mins) ..then flip and cook a few more mins...pull thighs out...add sliced lemon and sliced rings of shallots into pan - let lemon brown. -add some white wine maybe some chicken broth too ...cook down a few mins, chicken back in pan- then cook in oven (350) 20 mins or so - take out...add a bit of butter. Yum + your caesar salad dressing on crisp romaine with homemade croutons and finishing with happy wife/happy life cake by Julia!
