Amateur hour here, but why no no-boil noodles? You said it in bold! So I'm curious why. I assume bc they're really that bad? (I only ever use them. gulp.)

They’re not bad, I just don’t love the texture...and if anyone were to use them, I wouldn’t want them to accidentally follow the instructions to soak them first! Otherwise they’d be too soggy.

It may be 80° degrees where I am today, but I’m still making this for dinner tonight and will be eating leftovers for a few days! I’m excited to try this method with the lasagna noodles!

Do you think the soak method would work with Banza or gluten free noodles?

I'm honestly not sure — I think GF pasta tends to get mushy pretty fast, so my best bet would be to skip the soaking (and boiling) and to just layer and bake...

Hi! I'd like to make this for someone whose partner is in the hospital (and thus won't want to heat up a whole pan of lasagna), so I wondered if you would make any adjustments for baking this in two or four smaller pans?
