I did classic cheddar and scallions during last Sunday's class and it's sooo good. I had one piece warm with a glass of white wine post class (highly recommend) and wrapped individual portions in foil to freeze for my lunchboxes this week. Today I forgot to put one in my lunch and my husband drove over to bring me the whole bag to keep in the freezer at work. If that's not true love ...

I’m always tempted by the big squares of blueberry cornbread at Whole Foods! I used to make a blueberry cornmeal cake - similar concept, but much sweeter...YUM!

Just working my way through the archives. I’m British and cornbread isn’t a cultural ‘thing’ here. What do you serve it with? It looks and sounds so delicious and kid friendly but I can picture it slotting into a meal. Is it like a dessert or breakfast ie with butter and honey?

hi!! Cornbread can be served just about anytime with just about anything....it's often accompanies chili and stews and soups. One of my favorite meals is beans, slowly cooked greens, and a warm piece of buttered cornbread. It's a go-to side dish for lots of Southern food and is a great thing for potlucks and picnics. It is wonderful with butter and honey, just as you described, with some coffee as part of breakfast or for a snack.
