Hi! If you’re new here, on Tuesdays I devote my newsletter to “I Love Lunch” and include an easy lunch recipe for paid subscribers. To me, lunch recipes are especially simple to make and simple to clean-up. Of course you can make the recipe for any mealtime that you’d like! I always include a number of helpful notes for paid subscribers (i.e. ways to make vegetarian/vegan/gluten-free versions of the recipe and other fun notes/ideas).

Okay, onto today’s recipe!
Last week I shared a recipe for smash burger tacos because I got an already inexpensive griddle on sale and have been trying to use it for things beyond pancakes — all that surface area!
But I also use it often for pancakes. And lately I’ve been really enjoying these Banana Oat Pancakes that I’m excited to share with you today:
These pancakes are based on these Blender Muffins, which I wrote about way back in spring 2022 when I first started this newsletter (!)
I love these Banana Oat Pancakes for all the same reasons I love those Blender Muffins: they’re a great way to use up overly ripe bananas, they’re more filling than regular pancakes because they’re made with ground oats instead of just plain flour (more fiber!), and a blender does all the hard work for you of grinding the oats and pureeing everything for the batter.
One big difference for these pancakes versus the original muffins is that I add a full cup of cottage cheese to the batter to add tenderness and more protein. These pancakes are not light and fluffy, nor are they a mere blank canvas for toppings. They’re hearty and nutty and a little banana-y. They’re great!
And yes you can absolutely have these pancakes for breakfast or dinner (love breakfast for dinner!!). But for this newsletter, we’re leaning into lunchtime pancakes because I love pancakes and I love lunch. Logic!
