Hi! If you’re new here, on Tuesdays I devote my newsletter to “I Love Lunch” and include an easy lunch recipe for paid subscribers. To me, lunch recipes are especially simple to make and simple to clean-up. Of course you can make the recipe for any mealtime that you’d like! I always include a number of helpful notes for paid subscribers (i.e. ways to make vegetarian/vegan/gluten-free versions of the recipe and other fun notes/ideas).

Want today’s recipe + thorough list of helpful notes?? Become a paid subscriber today!

Today’s recipe is such a winner. Inspired by the dozens of popular recipes out there for sheet pan gnocchi recipes, I picked up a package of shelf-stable potato gnocchi at the store the other day and threw it on a sheet pan with a bunch of fresh spinach (from LSF!) and some Italian turkey sausage. I roasted it all and then tossed it with some store-bought pesto and heavy cream. Wow wow wow! Easy peasy and so satisfying.

It was so quick and easy and I am so excited to share it with all of you today! It’s also endlessly riffable. For paid subscribers, below you’ll find the recipe, plus ideas for:

  • my gluten-free friends

  • my vegetarian friends

  • my vegan friends

  • my friends who don’t like spinach

  • my friends who don’t love pesto

  • my friends who don’t love cream

  • my friends who can’t imagine any type of gnocchi without tomato sauce

  • my friends looking for additional combos such as:

    • sheet pan gnocchi with mushrooms + marsala

    • sheet pan gnocchi with squash + pecorino

    • sheet pan gnocchi with peas + prosciutto

This amazing lunch is ready is half an hour and 95% of that time is just the sheet pan in the oven doing its thing. So good!!
