Hi! If you’re new here, on Tuesdays I devote my newsletter to “I Love Lunch” and include an easy lunch recipe for paid subscribers.

To me, lunch recipes are especially simple to make and simple to clean-up.

Today’s recipe for One Pot Greek-ish Turkey + Orzo is a one pot wonder that can be made in under half an hour. I made last night for dinner and look forward to having again for lunch just as soon as I send this newsletter out! Real time writing here, folks!

Some notes about the recipe…

  • This recipe was born out of what was kicking around in my kitchen, which means it’s scrappy and very versatile — a list of suggestions and variations is below for paid subscribers!

  • Yes, I sauté the ground turkey and the aromatic vegetables at the same time. Does this crowd the pot? A little. Do I care? Not even a little. I just want everything to cook and build some flavor. Sometimes browning one thing and moving it to a bowl so that I can sauté something else just feels like one step and one bowl too many. No need for that here!

  • If you feel a meal isn’t complete without something green, you could throw in a bag of frozen chopped spinach or roughly chopped fresh cooking greens (kale, chard, spinach, etc.) into the pot along with the orzo. Or just serve the finished dish with a little salad alongside like I did last night (romaine + cucumbers doused with red wine vinegar, olive oil, salt and pepper….easy peasy…you could add peas!)
