Hey there! On Tuesdays I share easy lunch recipes for paid subscribers.

Okay, back to lunch. Or breakfast. Or a snack.
Today I’ve got egg bites for you a.k.a. mini frittatas a.k.a. egg muffins a.k.a. crustless quiche. Call them whatever you want…just call them! I am by far from the first person on the internet to share these, but I still think worth sharing because maybe (a) you’ve made these before but need a little reminder how handy/great/satisfying they are, (b) you’ve always wanted to make these but just needed a little encouragement, or (c) this is your first time hearing about these (really?!).
Egg bites are just eggs blended with cottage cheese, seasoned simply with salt and pepper and baked in muffin tins. They are the ideal place to put all of your odds and ends (random cheese, vegetables, etc.).
They are also the perfect thing to batch cook because they reheat so well and are so delightfully portable and convenient. Plus, why go to the trouble to make just a couple and not a whole tray? And why make one tray when you can fit two on your oven rack and use an entire dozen eggs??!!?
