Hey there! On Tuesdays I share easy lunch recipes* for paid subscribers.

To me, *lunch recipes are especially simple to make and simple to clean-up (of course you can make the recipe for any mealtime that you’d like!).

I always include a number of helpful notes for paid subscribers (i.e. ways to make vegetarian/vegan/gluten-free versions of the recipe and other fun notes/ideas).

As you already know, I’ve been spending time with my pals over at Long Season Farm these days. And right now is really the best time at the farm. There are still summer favorites like the last of the tomatoes and plenty of fresh herbs, and all of the fall stuff — delicata squash, beets, so many chicories including castelfranco radicchio and even puntarelle — is happening.

So with this special moment in the season in mind, I thought I’d share one of my favorite recipes from WHAT GOES WITH WHAT today: the easiest ever eggplant parm sandwiches. They let us celebrate the final eggplants!!

The sandwiches are incredibly satisfying and require very little clean up. To make them, you line a sheet pan with foil, cover it with the sliced eggplant, and broil until the eggplant is browned. Then add some tomato sauce (store-bought is fine!) and mozzarella, stick the pan back under the broiler, and boom: low-effort eggplant Parm.

While that’s all happening, spread some garlic butter on rolls and then broil those too so you end up with delicious garlic bread for your sandwiches. These heroes give you all the flavor and crunch of breaded eggplant without having to do the work of breading and frying (which is so much labor and so much to clean up).

When WGWW came out a year ago, I even got to make these on Good Morning America…!
