Hey there! On Tuesdays I share easy lunch recipes for paid subscribers.
To me, a “lunch recipe” is especially simple to make and simple to clean-up (of course you can make the recipe for any mealtime that you’d like!).
I always include a number of helpful notes for paid subscribers (i.e. ways to make vegetarian/vegan/gluten-free versions of the recipe and other fun notes/ideas).
A few months ago I was visiting my best friend and her kids were having crispy chicken cutlets (made in the air fryer FTW!!) for their dinner, plus some roasted sweet potatoes and cucumbers. There was not quite enough for us adults to also have a full dinner, but I thought I could stretch the leftovers into a big, satisfying salad. So I chopped up whatever lettuce I could find and made a quick dressing with chopped pickles and pickle brine in it.
It ended up being so good that I quickly jotted down notes for myself for the dressing so I could bring it home with me.
I’ve been making a version of this salad on repeat for myself for lunch featuring chicken tenders I buy in the frozen food aisle (Grace and I are partial to the Applegate gluten-free chicken tenders even though neither of us are gluten-free…they’re just really crispy!!!) and it always—ALWAYS—hits the spot.
And so today I am thrilled to share it with all of you.
