So today I am back with another! This month the 3 are: chicken thighs, farro + corn.

And a few reminders

  • All of the food is family-friendly, which is just my way of saying relaxed, simple and tasty.

  • Family is up to you to define. It can include kids or animals (or not). It can include multiple generations, spouses or partners, roommates, neighbors….whatever!

  • THREE-FOR-THREE is the most true way to show you how I really cook at home and set myself (and my family) up for success every week. What do I mean by success here? I mean having an easygoing relationship with cooking and eating. I mean having dinnertime feel uneventful but not boring.

  • My goal with this newsletter, and with all of my work, has always been to help you feel calm + empowered in your kitchen. Why does this matter to me? Because it makes our day-to-day lives less stressful and more connected to each other. I really think THREE-FOR-THREE will help us all feel this way.

  • The recipes will always be plentiful and easy to multiply if you’re feeding more people than I am.

  • If the recipes aren’t vegetarian, I will give you notes on how to make them vegetarian.

  • There will always be notes for more ideas/variations.

  • You don’t have to turn the three basic things into the other things. You can just enjoy them as they are!!

  • You don’t have to make all three meals — you can use the three components to just make one or two. You can do WHATEVER YOU WANT!!!

  • None of this is prescriptive. As with everything I offer, it’s all just a big suggestion.

  • Grain Bowls

  • Chicken, Farro and Corn Chowder

QUICK NOTE! Just a reminder that you can microwave your corn whole for a few minutes, then cut off the stem end and carefully slide the corn through its husk (use a towel! it’s hot!) — all of the silks will be left behind. A small victory if I ever saw one.
